In 2019 the idea to establish a distillery was established! The high levels of sugar in the Queen Victoria pineapples makes them the perfect fruit to convert to alcohol with the bonus being no wastage of non-market quality pineapples by the farm. The selected pineapples are then juiced to extract the sweet and fragrant nectar, which is carefully fermented using traditional methods to convert the sugar into alcohol.
Once the fermentation process is complete, the liquid is then distilled in small batches using a traditional still. During the distillation process, the liquid is heated and vaporized, allowing the alcohol to separate from the other components. The alcohol vapor is then cooled and condensed back into a liquid form, resulting in a pure and concentrated spirit.
The distillation process undergoes multiple rounds to refine and elevate the flavour and aroma of the spirit, ensuring each bottle reflects the rich essence of the pineapples used. The final product is meticulously blended, bottled, and labelled by hand - capturing the dedication and craftsmanship behind every one of our six uniquely crafted pineapple spirits.
